Butternut Squash, Apple & Cranberry Stuffing

Today I made one last Thanksgiving dish to share here that combines tart dried cranberries, mellow butternut squash, sweet apple, and a sage-parsley-thyme seasoning. It turned out so colorful, aromatic, and flavorful that I think this will be a new traditional dish for us. I’m not sure there will be any left for tomorrow’s festivities! Thanksgiving Dish Roundup

My philosophy on Thanksgiving preparations is to go for simple, comforting, and familiar. If you want to get fancy, get out your nicest tableware and table linens, decorate with a festive centerpiece and maybe focus on one new dish. This year, I’m trying out a butternut squash-apple-cranberry stuffing, and if all goes well, I’ll share the recipe here for next year. Golden Mashed Potatoes with Leeks

IMG_5979With Thanksgiving just around the corner, I want to share a simple mashed potatoes recipe we’ve enjoyed for a few years now (as in, eat bowl after bowl for the entire week following Thanksgiving). The potatoes get heaps of flavor from sautéd leeks, Greek yogurt, and butter. You can also top with crisped bacon or chives, and if no one is looking, mix in another stick of melted butter (for a once-a-year indulgence, right?). Continue reading
