Seared lamb chops get a vibrant punch of flavor with a healthy dollop of mint yogurt sauce. This is one of my husband’s favorites, so we enjoy this dish often. While you sear the lamb chops and let them rest, you can blend up the mint yogurt sauce in very little time. It’s elegant enough for date night but also a great easy family dinner with a salad or side of veggies. Enjoy!
Lamb Chops with Mint Yogurt Sauce
- 6~8 lamb chops
- 2 cups loosely packed mint leaves
- 2 Tbs. Greek yogurt
- 1 Tbs. good olive oil
- Squirt of lemon wedge (or red wine vinegar if you prefer)
- Salt & pepper to taste
Directions:
- To make the mint yogurt sauce, I chop the mint with a small immersion blender; you could also use a food processor, a countertop blender, or just chop everything finely by hand. I blend the mint leaves with the lemon spritz first, then add salt and pepper and Greek yogurt and blend again, and lastly I add the olive oil and blend well to emulsify.
- Salt and pepper one side of the lamb chops. Heat 1 Tbs. olive oil in a skillet over medium heat and add half of the lamb chops, spread out nicely to give them space. Cook on each side for about 4 minutes, then remove to a plate. Add the second half of the lamb chops and repeat. They should be cooked through to the bone but still rosy pink inside. Let them rest a few minutes, then serve topped with a light drizzle of good olive oil and the yogurt mint sauce.
